Ingredientes
- 2 c. Salsa of choice
- 1 1/2 c. Diced cucumber
- 1/2 c. Diced green onion
- 2 x (16-oz) cans cannellini Or possibly navy beans, rinsed and Liquid removed
- 1 1/2 x To 2 c. V8 Juice of 1 lime
Direcciones
- In a large bowl, place the salsa, cucumber, green onion and beans. Pour in sufficient V8 to make a chunky, slightly thick soup. Stir in lime juice. A few ice cubes can be stirred in till melted to refrigeratesoup if ingredients have not been chilled beforehand. Serve immediately or possibly chill to allow flavors to blend.
