Receta Easy Lentil Spinach Soup

Ingredientes
- 1 lb lentils
- 2 c. vegetable stock
- 2 Tbsp. coriander seeds
- 2 Tbsp. cumin seeds
- 1 tsp dry oregano
- 1 tsp dry basil
- 2 x bay leaves
- 3 sm red potatoes - (to 4) diced
- 1 lb fresh spinach thoroughly rinsed, and minced
- 3 c. peeled diced butternut squash
- 1 Tbsp. extra virgin olive oil
- 1 lrg onion minced
- 1 x celery stalk minced
- 1 x carrot peeled, sliced thin
- 4 x garlic cloves crushed Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Place all the ingredients in a large pot and bring to a boil. Lower the heat to a simmer and cook, covered, about 45 to 50 min. Remove the bay leaves before serving.
- This recipe yields 3 to 4 servings.
