- Put together lowfat sour cream and sugar in bowl. Mix well. Stir in coconut. Refrigerate overnight.Prepare and bake cake as directed. (This can be made into a 9 x 13 inch cake or possibly 2 layers.) Cool cake completely. Split cake into layers with a large knife. This will make 2 layers if making a 9 x 13 inch or possibly 4 layers if using regular cake pans. Turn layers cake side up and spread with coconut mix. Ice sides of cake with Cool Whip.
