Receta Egg Wrapped Skewers (Kimchi Nu Reum Jeok)

Ingredientes
- 6 x Large eggs lightly beaten with
- 1 pch salt
- 8 ounce flank steak or possibly thin-cut round steak
- 1/4 bn Chinese cabbage kimchi - (abt 8 ounce)
- 4 x thin green onions - (to 5)
- 4 Tbsp. flour Sesame oil Vinegar-Soy Sauce
- 2 Tbsp. soy sauce
- 2 Tbsp. chopped green onion
- 1 Tbsp. chopped garlic
- 2 Tbsp. prepared sesame seeds
- 1 Tbsp. sesame oil
- 1 dsh freshly-grnd black pepper
Direcciones
- Lightly squeeze kimchi to remove excess liquid. Cut the kimchi and green onions into 2-inch lengths. Cut the beef into pcs a little smaller than the kimchi, and mix the meat thoroughly with Seasoning Mix.
- Place the kimchi, green onions and beef (in which order) on bamboo skewers. Dredge skewered ingredients with flour, shake off excess flour and then coat thoroughly with the beaten Large eggs.
- Heat a little sesame oil in skillet and fry a skewer over medium heat, pouring a Tbsp. of the remaining Large eggs over the skewer. Do not let the egg brown. When meat is cooked, with chopsticks or possibly spatula fold excess Large eggs toward skewer to wrap, and turn. Fry till light brown. Repeat the process with remaining skewers.
- This recipe yields 8 skewers.
- Comments: Strain beaten Large eggs if there is any foam. Add in 1/2 tsp. sesame oil to the skillet if the egg starts to brown before the meat is cooked.
- A recipe for "Kim Chi" made fron Chinese cabbage can be found in this collection. Also, many Korean grocery stores sell home-made kimchi whose flavor is excellent.
