Receta Extra Crispy Potatoes

Ingredientes
- 16 x new red potatoes quartered
- 3 Tbsp. unsalted butter
- 1/4 c. minced fresh herbs such as chives, parsley, rosemary
- 1 tsp salt
- 1/2 tsp pepper
Direcciones
- 1. Place potatoes in a large pot; add in sufficient water to cover. Bring to a boil over high heat.
- 2. Reduce heat to medium. Simmer till potatoes are tender, about 10 min. Drain.
- 3. Meanwhile, heat butter in a large skillet. Add in potatoes. Cook, stirring gently, till potatoes are crisp, about 5 min.
- 4. Sprinkle potatoes with herbs, salt, and pepper. Serve warm. Serve immediately.
- VARIATION: For more strongly seasoned potatoes, add in the stems of fresh herbs and 3 cloves of garlic to the water used for boiling potatoes.
