  • 1 sm arab bread or possibly 1 wholemeal pitta
  • 1/2 x cucumber finely minced
  • 3 x tomatoes finely minced
  • 3 x salad onions finely minced
  • 1 sm green pepper finely minced
  • 2 clv garlic crushed good handful fresh parsley minced small bunch fresh mint minced
  • 2 Tbsp. extra virgin olive oil
  • 1 x juice of half a lemon
  • 1 tsp sumac (grnd dry herb mix available from Arab food stores) optional salt and grnd black pepper

Direcciones

  1. Lightly toast the bread till crisp then break into bite size chunks and set aside.
  2. Place the minced vegetables and herbs a bowl; toss with the extra virgin olive oil lemon juice sumac (if using) and seasoning.
  3. When ready to serve fold in the bread.
  4. Serves 2
