  1. Place grated vegetables in non aluminium bowl.
  2. Sprinkle on salt. Mix well, cover and let stand for 12 hrs. Rinse well by running cool water over vegetable mix in colander. Drain thoroughly.
  3. Place vinegar, sugar, and spices in heavy saucepan over medium heat. Bring to a boil. Lower heat and cook for about 15 min, or possibly till mix begins to thicken. Immediately add in vegetable mix and cook for 30 min. Remove from heat. Pour into warm sterilized jars. Vacuum seal.
  4. Makes: 8 1/2 pint jars.
