Receta Fiesta Rice For A Crowd

Ingredientes
- 2 c. Minced onion
- 1/4 c. Butter or possibly margarine
- 4 c. Uncooked long grain rice
- 2 can Small pitted ripe olives. liquid removed
- 2 can Tomatoes with liquid (28 ounce) cut up
- 1 c. Minced green pepper
- 1 Tbsp. Salt
- 1 tsp Chili pwdr (or possibly up to 2 t.)
- 1 tsp Dry oregano
- 1/2 tsp Pepper
- 4 c. Water
- 3 c. Shredded cheddar cheese
Direcciones
- In a large skillet over medium heat, saute/fry the onion in butter till tender. Transfer to a large bowl. Stir in the next eight ingredients.
- Divide between 2 ungreased 13"x9"x2" baking pans. Stir 2 c. of water into each pan. Cover and bake at 350 for 1 1/2 hrs. Uncover; sprinkle with cheese. Return to the oven for 5 - 10 min or possibly till cheese melts.
