Ingredientes

  • 4 x boneless chicken breasts cooked and minced or possibly whole chicken, about 5 c.
  • 2 Tbsp. oil
  • 2 Tbsp. orange juice
  • 2 Tbsp. white vinegar cider or possibly balsamic are fine
  • 3 c. rice, cooked
  • 1 1/2 c. seedless grapes I like the red best
  • 1 1/2 c. bias sliced celery
  • 1 can pineapple tidbits (20 ounce.) liquid removed
  • 1 can Mandarin oranges (11 ounce.) liquid removed
  • 1 c. slivered almonds TOASTED*
  • 1 1/2 c. mayo

  1. * I usually do this in a small skillet, stove top Marinate chicken in oil, juice and vinegar several hrs or possibly overnight. I usually add in more juice. Toss all together, folding in mayo.
  2. NOTES : I made this salad using various recipes for my son's rehersal dinner, using double the ingredients. I made about 20 other salads, using double and triple ingredients, along with Carolina barbecue & baked beans. We had 80 some people. We had sort of a western theme and opened the garage up to beverages in tubs and coolers, music and line dancing. The wedding was in July. We had a huge ice-down server like a restaurant's salad bar and the dishes nestled down in an ice bed. It was a labor of love which we will always remember...
