Receta Focaccia And Cottage Cheese Open Sandwich

Ingredientes
- 1 pkt Vine ripened or possibly any small full flavour tomatoes
- 1 Tbsp. Extra virgin olive oil
- 1 x 200 gram car Creamery cottage cheese
- 1 Tbsp. Freshly grated herbs Salt and freshly grnd black pepper
- 1 x Round focaccia loaf, cut in half widthways and quartered
- 2 Tbsp. JS fresh red pepper, (2 to 3) dressing
Direcciones
- Preheat the oven 190 C, 375 F, Gas Mark 5.
- Place the tomatoes on a baking sheet and drizzle with extra virgin olive oil, roast for 20 min in the preheated oven.
- Meanwhile, prepare the sandwiches. Place the Creamery cheese, fresh herbs and seasoning in a small bowl and mix with a spoon.
- Divide the bottom quarters of foccacia between two plates. Spread the bread with the cheese mix and decorate with salad leaves. Drizzle the cheese with red pepper dressing and top with remaining bread. Lay some roasted tomatoes on each plate still attached to the vine and serve.
- NOTES : A quick and delicious lunchtime snack for 2.
