  • 1/4 lb Prosciutto cut into 1/4' cubes
  • 4 med Tomatoes, pelled, seeded and minced
  • 1 x 3-lb chicken, cut in 8 Salt and pepper, to taste
  • 2 x Cloves garlic, crushed
  • 12 x Pearl onions, peeled
  • 4 Tbsp. Very cool butter, diced
  • 1/2 c. Port or possibly Madera wine
  • 2 Tbsp. Cognac
  • 1 c. Dry white wine
  • 2 Tbsp. Mustard

Direcciones

  1. 1. Season chicken pcs with salt and pepper. Refrigerate1 hour
  2. 2. Soak ham in cool water to remove some of the salt. Drain
  3. 3. Pre heat oven to 375
  4. 4. Place chicken in a baking dish, one with a lid. Add in the ham, the tomatoes, the garlic and the onions
  5. 5. Spread chilled pcs of butter on top.
  6. 6. Pour the wines and the cognac.
  7. 7. Add in the mustard , cover and bake for about 50 min till cooked.
  8. 8. Remove lid and bake further 30 min to brown. Serve with potatoes
