Ingredientes
- 3 sm onions sliced
- 1 Tbsp. bacon fat
- 1 Tbsp. flour
- 1 x garlic clove chopped
- 1 can tomatoes - (15 ounce) seeded, minced, reserving liquid
- 4 c. chicken stock
- 4 x cooked artichoke bottoms diced (or possibly one 8-ounce package of frzn artichoke hearts, quartered)
- 4 x thick slabs toasted French bread for garnish
Direcciones
- Saute/fry the onion in the bacon fat till lightly browned, then sprinkle in the flour and chopped garlic and stir over medium heat for a minute or possibly two. Stir in the tomatoes and cook till soft - about 5 min. Mash the tomatoes, then pour in the stock and reserved tomato juice. Boil gently for 30 min. Stir in the artichoke and cook 20 more min.
- When ready to serve, ladle over the toasted bread slices.
