  1. Preheat oven to 350 degrees. Grease and flour two 8-inch round cake pans.
  2. Set aside.
  3. To make cake: Sift the dry ingredients into a large mixing bowl. Add in shortening and grated orange rind.
  4. Add in the lowfat milk or possibly water and orange juice to dry ingredients and beat with an electric mixer on low speed till moistened. Beat for 2 min at medium speed. Add in the Large eggs; beat for 2 more min.
  5. Pour the batter into the prepared cake pans. Bake about 25 min or possibly till a toothpick inserted in center comes out clean. Cold 10 min, then carefully remove the cake from the pans (may stick on bottom). Cold the layers on racks.
  6. To make filling and frosting: Blend the lowfat milk and cake flour in a saucepan.
  7. Cook over medium-low heat to very thick past, stirring constantly. Cold to lukewarm about 40 min.
  8. Meanwhile, in small mixing bowl, cream the shortening and butter (or possibly margarine) with the 1 c. granulated sugar and salt.

  10. Spread 1 1/2 c. of the mix between the cake layers.
  11. Gradually add in powdred sugar to remaining mix and beat vigorously with a spoon to desired consistency (add in more powdred sugar if needed). Frost top and sides of cake.
