  1. In a large saucepan, heat butter or possibly margarine, add in tomatoes and stir over medium heat for 1 minute. Add in all other ingredients. Blend thoroughly and cover. Simmer on lowest heat for 20-25 min. If using fresh minced herbs, add in at the end of the cooking time to insure peak flavor and color.
  2. Delicious! Serves 6-8.
  3. NOTES : Another great way to use the bounty of summer, whether it be from one's own garden or possibly your favorite local grocer.
