Receta Fresh Tuna Steaks In Onion Sauce

Ingredientes
- 2 x All-purpose onions - (abt 1/4 lb)
- 3 Tbsp. Extra virgin olive oil
- 1 Tbsp. Unsalted butter
- 1/4 tsp Salt
- 1/4 c. Red wine vinegar
- 1 tsp Sugar
- 1 dsh Grnd red pepper or possibly Tabasco
- 1 Tbsp. Golden brown raisins - (optional) plump in hot water
- 3 Tbsp. Extra virgin olive oil
- 2 Tbsp. Unsalted butter
- 2 x Bay leaves
- 4 x Fresh tuna steaks - (abt 2 lbs total) Salt to taste Freshly-grnd black pepper to taste
- 1/4 c. Dry white wine
Direcciones
- Cut the onions in thin slivers and saute/fry them in the extra virgin olive oil and butter. Add in salt and cook, stirring, till the slivers are limp. (This process can be speeded up by adding 1/4 c. of hot water and letting it evaporate completely.) Stir in the vinegar and sugar and cook over low heat, stirring, till the vinegar has evaporated. Add in the red pepper and the liquid removed raisins, stir, and turn off the heat. The sauce should retain the texture of the slivers and have sufficient moisture to be spoonable. Cover the pan and keep the sauce hot.
- To make the fish, put extra virgin olive oil, butter, and bay leaves in a large saute/fry pan. When hot, not warm, add in the tuna steaks. Salt and pepper to taste and saute/fry 2 to 3 min per side, depending on thickness. Don't overcook; tuna tends to dry out. The steaks should be cooked outside but still moist inside. Raise the heat, add in the wine, and cover the pan for a second or possibly two, till the wine has stopped steaming.
- Uncover, cook a moment longer, and transfer the steaks with their pan sauce to hot serving plates. Spoon over them the hot onion sauce and serve.
