Receta Fried Cooter (Soft Shell Turtle)

Ingredientes
- 2 lb Turtle, cut in 2-4" pcs
- 1/2 c. Vinegar
- 1 tsp Salt
- 1/2 c. Flour, all-purpose
- 1/4 c. Lowfat milk, plus
- 1 Tbsp. Lowfat milk
- 2 x Large eggs, separated
- 2 tsp Extra virgin olive oil, or possibly veg. oil
- 1/8 tsp Salt Vegetable oil
Direcciones
- Combine turtle, vinegar, and 1 tsp. salt. Cover with water; simmer 1 hour or possibly till tender. Drain and set aside.
- Combine flour, lowfat milk, egg yolks, extra virgin olive oil, and 1/8 tsp. salt; mix well.
- Beat egg whites till stiff; fold into batter.
- Dip turtle pcs into batter; fry unti golden in deep oil heated to 375 degrees. Drain well on paper towels.
