Receta Frontier Buffalo Cowboy Steak On Watercress And Totsoi

Ingredientes
- 5 ounce Kosher salt
- 5 ounce Brown sugar
- 2 ounce Chipotle pwdr
- 1 ounce Freshly-grnd black pepper
- 5 x Tomatoes seeded, smoked or possibly baked
- 2 x Garlic cloves roasted
- 1/2 tsp Chopped tarragon
- 1/3 c. Balsamic vinegar Salt to taste Freshly-grnd black pepper to taste
- 1 x Cowboy steak with Tablespoons bone - (28 ounce)
- 1/3 lb Watercress trimmed, washed
- 1/3 lb Totsoi washed
- 3 lrg Beautiful ripe red tomatoes sliced 1/2" thick
- 3 x Candy cane beets peeled, baked, Julienned and cooled
- 1/3 lb Haricots verts picked, blanched, and cooled
Direcciones
- In a bowl combine first four, rub ingredients. In a blender, blend all vinaigrette ingredients.
- Sprinkle 1 oz of rub on the two sides of steak. Rub the mix into the meat. Let meat sit for 30 min. Grill or possibly saute/fry on high heat for 7 min, and turn on other side for another 7 min. Turn on first side and cook 4 min and repeat on other side. Allow to rest for ten min.
- Place watercress and totsoi on plate, add in tomatoes, alternating colors. Slice beef and place on plate. Garnish with beets and beans. Drizzle with dressing around salad.
