Receta Pacific Rim Beef Salad With Sesame Ginger Dressing

Ingredientes
- 2 tsp sesame oil
- 1 tsp soy sauce
- 2 x garlic cloves chopped
- 1 tsp freshly-grnd black pepper
- 1 tsp Chinese plum sauce
- 1 sm serrano chile seeded, chopped
- Â Â (or possibly 1/4 tspn cayenne chile pwdr)
- 2 x boneless strip sirloin steaks - (abt 10 ounce ea)
- 1/2 c. unseasoned rice vinegar
- 1/3 c. julienned pickled ginger
- 1/4 c. sesame oil
- 1 Tbsp. soy sauce
- 1 x garlic clove chopped
- 1 sm Bibb or possibly butter lettuce head leaves separated
- Â Â (or possibly mizuna lettuce)
- 1 bn watercress stemmed
- 1 x red onion julienned
- 1 x red bell pepper seeded, julienned
- 1 c. bean sprouts
- 2 x scallions sliced on a diagonal
- 1 x cucumber peeled, seeded,
- Â Â and sliced on a diagonal
- 1 Tbsp. sesame seeds for garnish

- Thoroughly combine all the marinade ingredients in a large dish.
- Turn the steaks in the marinade and cover the dish with plastic wrap. Marinate at room temperature for at least 1 hour, turning the steaks once. Or possibly, alternatively, chill overnight (in that case, bring to room temperature before sauteing).
- To prepare the dressing, whisk together all the ingredients in a mixing bowl till emulsified. Set aside.
- Remove the steaks from the marinade and pat dry. Heat a dry, heavy saute/fry pan or possibly skillet and sear the steaks over medium-high heat for about 4 min per side, till just medium-rare. Remove the steaks from the pan and let rest.
- Toss all the salad ingredients together with the dressing in a large mixing bowl.
- This recipe yields 4 servings.
- Comments: The plum sauce in the marinade (also called duck sauce) is a sweet-and-sour Chinese condiment made with plums and apricots which, like the pickled ginger in the dressing, is available in most supermarket Asian food sections.
