Receta Fruit 'N' Fibre Overload Muffins

Ingredientes
- 1 c. apple grated
- 1/2 c. banana mashed
- 2 x Large eggs
- 1 1/2 c. buttermilk
- 1/2 c. molasses
- 1/4 c. vegetable oil
- 3 c. natural bran
- 1 1/2 c. whole wheat flour
- 1/3 c. granulated sugar
- 1 tsp baking pwdr
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 c. blueberries or possibly cranberries
Direcciones
- Preheat oven to 375F (190C). Grease 12 muffin c. or possibly coat with cooking spray. In a medium-sized mixing bowl, beat Large eggs. Stir in buttermilk, molasses, oil, grated apple, and mashed banana.
- Measure bran, flour, sugar, baking pwdr, baking soda, and cinnamon into alarge mixing bowl. Stir with a fork till mixed, then, make a well in centre. Pour in fruit mix, stirring just till combined. Stir in blueberries or possibly cranberries.
- Immediately spoon batter into muffin c.. Bake in center of 375F (190C)
- oven till golden brown and a cake tester inserted into center of a muffin comes out clean, about 30 min. Remove from oven and let stand for 5 min.
- Then turn out onto a cooling rack. Serve hot. Store muffins in a sealed bag at room temperature for up to 2 days. For longer storage, chill muffins or possibly preferably freeze.
