Receta Genoese Salad

Ingredientes
- 300 gm red mullet fillets juice 1 lemon
- 250 x water
- 150 gm canned octopus
- 100 gm frzn scampi thawed
- 2 x onions thinly sliced
- 1 sm pickled cucumber thinly sliced
- 2 x tomatoes skinned seeded and quartered
- 100 gm canned french beans dressing
- 80 ml extra virgin olive oil
- 2 Tbsp. wine vinegar
- 1 tsp prepared mustard
- 1 x salt pepper
Direcciones
- Poach the red mullet fillets in the lemon juice and water for 10 min.
- Drain and flake.
- Cut the octopus into bite sized pcs.
- Put the mullet octopus and scampi in a bowl.
- Add in the onions pickled cucumber tomatoes and French beans and mix carefully.
- Mix the dressing ingredients together and pour over the salad.
- Allow to stand for 20 min before serving to allow the flavours to mingle.
