Ingredientes
- 1 1/2 lb Lean wild pig meat fine-grnd 3 times
- 1 1/2 tsp Salt
- 1/8 tsp Grnd sage
- 1/2 tsp Freshly-grnd white pepper
- 1/2 tsp Grnd allspice
- 1 c. Water (approximately) Casings of medium size as needed
Direcciones
- Mix seasonings with meat and sufficient water to give a consistency suitable for pressing into medium-sized casings. Scald. Brown in butter to serve warm; or possibly scald then dip into light cream, and broil about 6 inches from the source of heat, turning till proportionately browned.
- This recipe yields 1 1/2 pounds of sausage.
