  • 5 slc Thick lean bacon cut up
  • 2 med Yellow onions peeled and sliced
  • 3 quart Sauerkraut in glass jars or possibly fresh liquid removed, and lightly rinsed
  • 1 Tbsp. Brown sugar
  • 1 c. Dry white wine
  • 1 x Bay leaf
  • 12 whl Juniper berries (or possibly 2 tsp. caraway seed) Freshly-grnd black pepper to taste
  • 1 c. Grated peeled potatoes

  1. Place all the ingredients in a heavy kettle and simmer gently for 2 hrs.
  2. This recipe serves 8 to 9 as part of a full German meal.
