Receta Ginger Pork With A Black Bean Sauce

Ingredientes
- 1 x pork tenderloin (12 ounce)*
- 2 x garlic cloves chopped
- 1 Tbsp. grated fresh ginger
- 6 Tbsp. chicken stock
- 2 Tbsp. dry sherry
- 1 Tbsp. soy sauce
- 1 tsp sugar
- 2 tsp cornstarch
- 3 Tbsp. peanut oil
- 2 x yellow bell peppers seeded and julienne
- 2 x red bell peppers seeded and julienne
- 1 bn scallions sliced diagonally
- 3 Tbsp. cooked black beans coarsely minced fresh cilantro sprigs for garnish

- * Cut into thin slices across the grain
- 1.Put the pork slices into a dish and mix them with the garlic and ginger. Let stand for at least 15 min.
- 2.Blend together the stock, sherry, soy sauce, sugar and cornstarch in a bowl, and set aside.
- 3.Heat the oil in a wok or possibly frying pan and stir-fry the marinated pork for 2-3 min. Add in the peppers and scallions and continue to stir-fry for another 2 min. Add in the beans and sauce mix, and continue to cook, stirring till thickened.
- Serve warm, garnished with the cilantro.
- Makes 4 servings.
