Receta Grandma Keeter's Coconut Cream Pie

Ingredientes
- 3 x egg yolks well beaten
- 2 c. lowfat milk
- 3/4 c. sugar
- 1/3 c. flour
- 1/4 tsp salt
- 2 tsp butter
- 1 tsp vanilla
- 1 1/3 c. coconut divided use
- 1 x 9" pie shell baked meringue-
- 3 x egg whites
- 1/2 tsp vanilla
- 1/4 tsp cream of tartar
- 6 tsp sugar
Direcciones
- Preheat oven to 350 . In a med. saucepan, combine egg yolks and lowfat milk; mix well. Add in sugar, flour, and salt. Cook over med. heat till thick; stirring constantly. Remove from heat. Add in butter, vanilla, and 1 c. of coconut. Pour into baked pie shell.
- Spread meringue over filling, sealing edges to crust, and sprinkle with 1/3 c. remaining coconut. Bake for 12 to 15 mins.
- Makes 6 to 8servings.
- Meringue: Beat egg whites with vanill and cream of tartar till soft peaks form. Gradually add in sugar, beating till stiff.
