Receta Grandma Neve's Watermelon Rind Pickles

Ingredientes
- 5 lb watermelon rind, cut into chunks Water
- 1 Tbsp. alum
- 3 lb sugar
- 1 c. vinegar
- 1/3 box stick cinnamon
- 1 Tbsp. whole cloves
- 1 Tbsp. allspice
- 1 Tbsp. black pepper
- 1 sm jar maraschino cherries
Direcciones
- Cut watermelon rind into chunks, removing all pink meat and green outer peel. Boil rind in water, to cover, for 1 1/2 hrs. After 1 hour, add in alum. Make a syrup by boiling sugar, vinegar, and spices, in a spice bag, for 30 min. Add in watermelon rind and boil for 10 min. Add in a jar of maraschino cherries. Remove spice bag. Pour into warm sterilized jars and seal.
