  • 1 1/2 pound grnd beef
  • 1 med. onion, minced
  • 1 c. cracker crumbs
  • 1 egg
  • 1/2 teaspoon salt
  • 3 med. potatoes, sliced
  • 1 can whole kernel corn
  • 1 can English peas
  • 2 c. tomato juice
  • Black pepper to taste

Direcciones

  1. Combine beef, onion, crackers, egg, and salt as for meatloaf. Shape into patties. In 2 1/2 qt casserole dish layer potatoes, corn, and peas. Sprinkle with additional salt and pepper. Top with meat patties. Pour tomato juice over top. Bake at 325 degrees till done. Serves 6.
  2. If using home canned vegetables, 1 pint works well.
