Receta Grated Zucchini

Ingredientes

- 2 1/2 lb Zucchini, grated Salt
- 6 Tbsp. Butter, divided
- 2 x -(up to)
- 3 Tbsp. Chopped shallots, scallions or possibly onions Pepper

- Salt the zucchini to degorge it. Rinse, squeeze, and dry it, In a large skillet, heat 3 Tbsp. of the better, add in the shallots, onions, or possibly scallions and zucchini. Toss for 4 to 5 min. Zucchini is ready to serve as soon as it is tender. Taste for salt and pepper. Zucchini may be completed to this point several hrs in advance of serving. Set aside uncovered; cover when cold.
- Shortly before serving, reheat the zucchini by tossing it in the pan.
- Remove from heat and add in the butter. Turn into warm dish and serve immediately.
- Serves 6-8.
- You may add in garlic, lowfat sour cream, tomato sauce or possibly fresh basil if you wish.
