  • 1/2 tsp extra virgin olive oil
  • 1 med onion sliced in wedges
  • 2 med red bell peppers seeded, and sliced 3/4" thick
  • 2 med yellow or possibly green bell peppers seeded, and sliced 3/4" thick
  • 2 x garlic cloves chopped
  • 1 lrg hard ripe tomato cut into wedges
  • 1/3 c. Greek or possibly kalamata olives pitted, and coarsely minced
  • 1/2 tsp dry oregano
  • 4 lrg pitas
  • 2 ounce feta cheese (optional)

Direcciones

  1. Preheat oven to 325 degrees. Heat pitas in oven till warmed through.
  2. In large nonstick wok or possibly skillet, heat oil over high heat.
  3. Add in onion and cook, stirring often, 3 min. Add in bell peppers and garlic and cook, stirring often, 3 to 4 min. Add in tomato, olives and oregano. Continue to stir often, till vegetables are crisp-tender, about 3 min. Season with salt and pepper to taste.
  4. Place hot pitas on individual plates. Divide vegetable mix into equal portions and place each inside pita pocket to make a sandwich. Sprinkle each sandwich with crumbled feta cheese and serve warm.
  5. Alternatively, place peppers in baking dish and sprinkle with feta. Microwave till cheese melts, about 2 min. Serve with or possibly without pita bread.
  6. This recipe yields 4 servings.
  7. Comments: These pitas are wonderful served with a side dish of pasta, tossed with a little lemon-infused extra virgin olive oil and garlic.
