Receta Greek Pork Pita Pockets

Ingredientes
- 1 lb Boneless pork loin, cut into thin strips
- 4 Tbsp. Extra virgin olive oil
- 4 Tbsp. Lemon juice
- 1 Tbsp. Prepared mustard
- 2 x Cloves garlic, chopped
- 1 tsp Dry oregano
- 1 c. Yogurt
- 1 x Cucumber, peeled and minced
- 1/2 tsp Crushed garlic
- 1/2 tsp Dill weed
- 4 x Pita breads, *See note
- 1 x Red onion, minced
- 4 x Lettuce leaves
Direcciones
- Cut pork into thin strips. Combine extra virgin olive oil, lemon juice, prepared mustard, chopped garlic, and oregano. Pour over pork. Chill 1-8 hrs.
- Stir together yogurt, minced cucumber, crushed garlic, and dill. Cover and chill.
- Remove pork from marinade. Stir-fry in non-stick pan over medium heat for 2-3 min.
- Open pita breads to create a pocket. Add in a lettuce leaf to each. Fill with pork. Top with cucumber mix. Garnish with minced red onion.
- *Note: American pitas are larger. Only two, split in half, are needed.
