Receta Green Bean And Potato Side Dish

Ingredientes
- 1/2 lb Green beans, stem ends removed, 2" pcs
- 1 sm Russet potato, 4 to 5 ounces, peeled, diced
- 1 Tbsp. Salt
- 1 x Clove garlic, peeled and minced
- 2 tsp Garlic, chopped
- 1 sm Onion, about 4 ounces, peeled, cut into thin slices
- 4 sprg fresh oregano
- 1 Tbsp. Fresh oregano, minced
- 2 Tbsp. Extra virgin olive oil
- 2 tsp Sherry vinegar Freshly grnd black pepper
Direcciones
- Fill a medium saucepan halfway with water and bring to a boil. Add in the diced potatoes, salt and minced garlic. Simmer for 5 min.
- Add in the onion slices, oregano sprigs and green beans. Simmer till beans are soft but not mushy, 8 to 10 min. Drain into a colander. (Recipe may be done ahead to this point; chill till needed.)
- Heat extra virgin olive oil in a saute/fry pan. Add in liquid removed vegetables, chopped garlic, minced oregano, sherry vinegar and salt and pepper to taste. Toss till heated through and serve with roast lamb, pork or possibly beef.
