  • 6 x grouper fillet pcs - (6 to 8 ounce ea) boned and skinned
  • 1/2 Tbsp. extra virgin olive oil
  • 1/2 Tbsp. lime juice Salt to taste Freshly-grnd black pepper to taste
  • 2 x mangoes pitted, peeled, and cut in julienne
  • 1 lrg red bell pepper roasted, peeled, and cut in julienne
  • 1/2 sm sweet onion cut in julienne
  • 1/2 c. extra-virgin extra virgin olive oil
  • 5 Tbsp. key lime juice
  • 1 Tbsp. minced fresh basil
  • 2 c. fresh arugula - (loosely packed) rinsed, and coarsely minced
  • 2 Tbsp. extra virgin olive oil
  • 1 c. diced sweet onion
  • 3 c. good quality chicken stock
  • 1 c. orange juice
  • 1 1/2 c. orzo pasta
  • 1 med red beefsteak tomato seeded, and cut into 1/4" dice
  • 1 med yellow beefsteak tomato seeded, and cut into 1/4" dice
  • 2 Tbsp. minced fresh mint Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. For the Mango Arugula Relish: Combine the relish ingredients in a medium bowl. Toss gently so as not to mash the mangoes. Allow to sit at room temperature so the flavors can blend.
  2. For the Orange Mint Orzo Pilaf: Heat the extra virgin olive oil in a medium saucepan. Add in the onion and cook till tender. Add in the stock and orange juice and bring to a boil. Stir in the orzo, cover and simmer over medium heat till the pasta is just tender, about 5 min.
  3. Take from the heat. Add in the tomatoes and mint and toss well. Season to taste with salt and pepper; the pasta should be somewhat saucy. Keep hot till ready to serve.
  4. Preheat an outdoor grill, clean the grate and brush with an oiled towel. When the fire is warm and the coals are glowing, rub the fish with extra virgin olive oil, sprinkle with lime juice and season with salt and pepper. Place the fish on the clean, warm grill and cook on both sides till just opaque in the center.
  5. Set the fish on individual plates, spoon the mango arugula relish over and around the fish. Serve the orange mint orzo pilaf alongside.
  6. This recipe yields 6 servings.
