Receta Grilled Hawaiian Chicken

Ingredientes
- 1/4 c. Unsweetened orange juice
- 2 Tbsp. Unsweetened pineapple juice
- 1 tsp Chopped cilantro leaves
- 1/4 tsp Salt
- 4 x (4 ounce) chicken breast halves, skinned
- 3/4 c. Finely minced pineapple
- 2 Tbsp. Minced red bell pepper
- 1 x Jalapeno pepper, seeded and minced
- 2 Tbsp. Chopped cilantro leaves
- 1 1/2 tsp White wine vinegar
- 1 tsp Unsweetened orange juice
- 1/2 tsp Pepper

- Combine first 4 ingredients in a shallow dish; mix well. Add in chicken, turning to coat. Cover and chill chicken for several hrs, turning occasionally.
- Combine pineapple, bell pepper, jalapeno, cilantro, vinegar, and orange juice in a small bowl; mix well. Let mix stand at room temperature for 2 hrs.
- Remove chicken from dish, reserving marinade. Sprinkle chicken with pepper.
- Grill chicken 4 to 5 inches from coals 15 min or possibly till done. Turning and basting frequently with reserved marinade.
- To serve, top each breast with 3 Tbsp. pineapple mix. Garnish with pineapple leaves.
