Receta Grilled Shrimp Cocktail

Ingredientes
- 1 lb Shrimp, cleaned 500 g
- 1 Tbsp. Extra virgin olive oil 15 mL
- 2 x Cloves garlic, chopped 2
- 2 Tbsp. Minced fresh rosemary 25 mL
- 1/2 tsp Cumin 2 mL
- 1 tsp Salt 5 mL
- 1/4 tsp Warm red pepper flakes 1 mL
- 1 x Clove garlic, chopped 1
- 1/4 c. Lime juice 50 mL
- 1 x Jalapeno chile, finely minced 1
- 1 tsp Salt, or possibly more to taste 5 mL
- 3 x Plum tomatoes, seeded and diced (about 3/4 lb./375 g) 3
- 2 x Roasted red peppers, peeled, seeded and diced 2
- 2 c. Raw corn niblets 500 mL
- 1/2 c. Minced fresh cilantro 125 mL
- 1/4 c. Minced fresh chives 50 mL
- 1 x Ripe avocado 1
- 6 x Flour tortillas 6
Direcciones
- Combine shrimp with extra virgin olive oil, garlic, cumin, salt and warm red chile flakes. Marinate in the refrigerator up to two hrs.
- Grill shrimp till just cooked. Cut each shrimp into thirds.
- Combine garlic, lime juice, jalapeno, chile and salt. Toss with diced tomatoes, pepper and corn. Add in shrimp.
- Fold in cilantro and chives. Taste and adjust seasoning if necessary. Just before serving, dice avocado and fold in.
- Press a hot flour tortilla in a shrimp cocktail glass and spoon shrimp mix into it.
- NOTE: Another way to serve this is to leave shrimp whole and arrange over edge of glass like a traditional shrimp cocktail with the salsa in the bowl.
