Receta Harvest Fresh Spinach Soup

Ingredientes
- 1/4 c. Butter or possibly margarine
- 1/4 c. Minced onion
- 1/4 c. All-purpose flour
- 1 tsp Salt
- 1/2 tsp Dry mustard
- 1/4 tsp Nutmeg
- 1 can Chicken broth
- 1/2 c. Shredded carrot
- 1 pkt (9-ounce.) frzn spinach
- 2 1/2 c. Lowfat milk
Direcciones
- Heat margarine in 2-qt saucepan over medium heat. Add in onions; cook and stir till tender. Reduce heat to low. Stir in flour, salt, dry mustard and nutmeg; cook and stir till mix is smooth and bubbly. Gradually stir in broth. Bring to a boil, stirring constantly. Add in carrot and spinach. Reduce heat to medium; simmer 10 min or possibly till carrot is tender and spinach is thawed, stirring occasionally. In blender container or possibly food processor bowl with metal blade, puree spinach mix till smooth. Return mix to saucepan; stir in lowfat milk. Cook over low heatuntil thoroughly heated, stirring frequently. 5 (1-c.) servings
