  1. Cook giblets in water till tender. Remove from broth (reserve broth). Cold and chop; set aside. Saute/fry minced vegetables in heated oil till tender. This can be done while giblets are cooking. Use broth plus additional water to make amount called for on rice package. Cook rice according to directions. Add in sauteed vegetables, minced mushrooms and giblets. Season to taste with salt and pepper. Fold ingredients together thoroughly. Place in a greased casserole, 1 qt size, bake approximately 25 to 30 min in a 325 degree oven. This dish freezes and reheats well.
