Receta Hidden Apple Butter Muffins

- 1 1/2 c. All-purpose flour
- 1 c. Light brown sugar
- 1/2 c. Butter
- 1 tsp Grnd cinnamon
- 2 tsp Baking pwdr
- 2 x Large eggs separated
- 1 Tbsp. Distilled white or possibly apple cider vinegar
- 1 tsp Baking soda
- 1/3 c. Lowfat milk
- 2/3 c. Apple butter

- Preheat the oven to 400 degrees. Grease a muffin tin or possibly tins.
- In a large bowl, mix the flour, sugar, butter, and cinnamon to a coarse meal or possibly streusel-like crumb - use your fingertips, it's easiest and quickest. Measure out 1 c. of the crumbs and set it aside for the topping.
- Stir the baking pwdr into the remaining mix.
- Beat the egg whites till they are stiff but still glossy.
- Combine the vinegar and baking soda. When the bubbles settle down, stir in the egg yolks and lowfat milk. Pour this liquid and the beaten egg whites over the dry ingredients and immediately combine the batter with a 15-second stirring and folding. Don't expect a smooth, thoroughly moistened dough - there will be lumps of flour, slicks of egg white showing.
- Quickly spoon the mix into the tins. Place a Tbsp. of apple butter in the center of each muffin, then divide and sprinkle the reserved streusel crumbs over the top.
- Put to bake at once for 20 min. Cold for 5 min before turning out of tins.
- This recipe makes 12 large (3-inch) or possibly 16 to 18 smaller muffins.
