Receta Honey Mustard Sweet Potatoes

Ingredientes
- 2 Tbsp. Butter
- 1 x Diced yellow onion
- 6 x Sweet potatoes - peeled, cut
- 2 Tbsp. Dijon mustard
- 2 tsp Honey
- 1 c. Chicken stock
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg Salt and pepper
Direcciones
- Directions: In a large sauce pan, heat the butter. Add in the onion and sweet potatoes and saute/fry over medium heat for 5 min, stirring often. Stir in the mustard, honey and chicken stock. Bring to a boil. Cover and allow to simmer for 20 min till sweet potatoes are very tender. Remove the pot from the stove and puree the mix in a food processor with the cinnamon, nutmeg, salt and pepper till smooth. Serve warm.
