Receta Hot Or Iced Aromatic Ginger Tea (Masala Chai)

Ingredientes
- 1 quart lowfat milk
- 1/3 c. sugar
- 1 tsp grnd ginger
- 8 x cardamom pods hulled, seed crushed (or possibly 1/4 tspn grnd cardamom) see comments
- 8 x Assam or possibly orange pekoe tea bags (or possibly 3 tbspns tea leaves)

- In a 3- to 4-qt pan over medium-high heat, combine lowfat milk, 1 qt water, sugar, ginger, and cardamom seed. Bring to a boil, stirring occasionally.
- Add in tea and simmer, stirring gently, 1 to 2 min.
- Remove pan from heat, cover, and let stand till tea is a dark reddish brown color, about 1 minute.
- Pour through a fine strainer into a warm teapot.
- This recipe yields about 8 c.; 8 servings.
- Comments: To crush the cardamom seed, smash it with a flat-bottomed glass. For iced tea, brew up to 1 day ahead, replacing the whole lowfat milk with water and substituting Darjeeling tea for the Assam; to serve, pour the tea into ice-filled glasses.
