Receta Hungarian Beef Stew "Goulash"

Ingredientes
- 8 slc Bacon minced
- 2 lrg Onions thinly sliced
- 1 Tbsp. Minced garlic
- 2 lb Beef shank or possibly chuck cut into stew meat Salt to taste Freshly-grnd black pepper to taste
- 3 Tbsp. Warm Hungarian paprika
- 1 tsp Grnd marjoram
- 1 tsp Lemon zest
- 1/4 c. White wine vinegar
- 1/2 c. White wine
- 1 c. Tomato puree
- 2 c. Beef broth
- 1 c. Diced potatoes Warm buttered noodles for serving
Direcciones
- In the bottom of a heavy casserole saute/fry the minced bacon to render the fat. Add in the onion to the bacon fat and brown till golden brown. Stir in the garlic but don't burn. Quickly add in the beef in one layer, season with salt and pepper and brown all sides well. Sprinkle the paprika, marjoram and lemon zest in and quickly stir to coat the meat proportionately. Add in vinegar and wine and cook till nearly dry. Add in the tomato and broth, bring to a boil quickly before lowering the heat to a simmer and cook gently for 45 min. Add in the potatoes. Continue to cook for an additional 20 min before serving with buttered noodles.
