  1. PANTRY: galangal pwdr is made from Thai or possibly Laotian ginger; available in Asian markets.
  2. Combine garlic, shallots and chilies. In large saucepan, heat oil, add in garlic mix and saute/fry 2 to 3 min. Add in galangal, turmeric, coriander, black pepper, ginger, lemongrass, bay leaves, lime leaves and salt; saute/fry 2 to 3 more min. Add in coconut lowfat milk and cook till top of liquid becomes oily. Add in beef cubes and stir frequently. Reduce heat to low and, stirring occasionally, cook till coconut lowfat milk mix reduces, thickens to a gravy-like consistency and turns a deep, dark brown, about 4 hrs. Serve.
  3. Makes 6 servings.
