Receta Italian Sausage Pasta Salad

Ingredientes
- 3/4 lb Sweet Italian sausages, casings removed
- 2 Tbsp. Extra virgin olive oil
- 1 c. Minced onion
- 4 lrg Garlic cloves, minced
- 3 c. Broccoli florets
- 1 med Zucchini, cut into 3/4-inch pcs
- 1/4 c. Dry white wine
- 5 lrg Plum tomatoes, seeded, diced
- 1 lb Rotini or possibly fusilli pasta, freshly cooked
- 1 c. Grated Parmesan cheese
- 1/2 c. Liquid removed minced black olives
- 1/2 c. Purchased Parmesan cheese salad dressing, (about)
Direcciones
- Saute/fry sausage in heavy large skillet over medium heat till cooked through, breaking up with spoon, about 6 min. Using slotted spoon, transfer sausage to paper towels. Pour off drippings; add in oil to same skillet. Add in onion and garlic; saute/fry till translucent/soft, about 5 min. Add in broccoli, zucchini and wine; saute/fry till vegetables are just tender, about 4 min.
- Add in sausage and tomatoes; toss till heated through, about 2 min.
- Transfer to large bowl. Add in pasta, cheese, olives and sufficient dressing to coat. Season with salt and pepper.
- Serves 6 to 8.
