Receta Italian Veal And Ham Rolls (Saltimbocca)

Ingredientes
- 4 x thin slices Veal
- 12 sm Sage leaves (or possibly 1/2 tsp dry sage) Freshly grnd black pepper
- 4 x thin slices Prosciutto, (raw Parma ham) Flour Melted butter
- 2 Tbsp. Marsala or possibly dry white wine
Direcciones
- Flatten veal into think pcs and cut each slice into 2 or possibly 3 pcs. Place 1 sage leaf (or possibly a healthy pinch of dry sage) on each slice and add in freshly grnd black pepper to taste (no salt, the prosciutto will flavor meat). Cover each slice of veal with prosciutto, cut to the same size, form each one into a small roll and secure with a wooden toothpick. Dust veal and ham rolls with flour and saute/fry in melted butter till they are golden brown on all sides; then add in Marsala or possibly white wine. Let it cook for a moment, then cover the pan and simmer gently till the veal and ham rolls are quite tender. Remove toothpicks and transfer to a warm serving dish. Serve immediately.
