Receta Jicama Peach Salsa

Ingredientes
- 1 c. Peeled, diced jicama
- 1/4 c. Minced red onion
- 1/2 c. Roasted, peeled, minced red bell pepper
- 2 med Peaches (or possibly nectarines) pitted, minced
- 2 x Jalapeno chilies seeded, minced
- 3 Tbsp. Fresh lime juice
- 1/2 tsp Ancho chili pwdr or possibly to taste
- 1 Tbsp. Minced fresh mint
Direcciones
- In a medium glass bowl, combine the jicama, onion, red pepper, peaches, jalapenos, lime juice, chili pwdr, and mint. Store in a covered container, in the refrigerator, no more than 1 day.
- This recipe yields about 2 c. of salsa.
