Receta Keefer's Hawaiian Peanut Butter Muffins

- 2 c. all-purpose flour
- 1 tsp salt
- 1 tsp baking pwdr
- 1 tsp baking soda
- 3/4 c. shredded coconut, to 1 c.
- 3/4 c. minced pecans, to 1 c.
- 6 Tbsp. softened butter, (3/4 stick)
- 6 Tbsp. creamy peanut butter
- 1 c. firmly packed brown sugar
- 2 x Large eggs
- 3 x ripe bananas, mashed
- 1 Tbsp. amaretto liqueur, or possibly vanilla

- Makes about 2 dozen muffins
- Preheat oven to 400 degrees. Spray regular-size muffin pans with nonstick cooking spray. In a medium bowl, stir together the flour, salt, baking pwdr, baking soda, coconut and pecans. Set aside.
- Using an electric mixer, beat the butter and peanut butter till light and fluffy. Add in the brown sugar and continue beating till well-combined. Add in the Large eggs, one at a time, scraping the sides of the bowl after each addition. Stir in the bananas and Amaretto.
- Gently stir the flour mix into the peanut butter mix just till blended.
- Fill the prepared muffin pans two-thirds full. Bake for 20 min or possibly till a toothpick inserted in the center of a muffin comes out clean. Remove from oven. Let muffins cold in pan about 5 min before removing to wire rack.
