Receta Lemon Zucchini Cookies

Ingredientes
- 2 c. Flour
- 1 tsp Baking pwdr
- 1/2 tsp Salt
- 6 Tbsp. Butter
- 3/4 c. Sugar
- 1 x Egg, beaten
- 1 tsp Lemon peel, grated
- 1 c. Zucchini, shredded
- 1 c. Pecans (or possibly walnuts) minced
Direcciones
- Preheat oven to 375 degrees. Stir together flour, baking pwdr, and salt.
- Sift and set aside. Cream butter and sugar till very creamy and light.
- Beat in egg and lemon peel till fluffy.
- At low speed, blend in flour mix. Stir in zucchini and nuts. Drop by teaspoonfuls onto a greased cookie sheet. Bake 15 to 20 min. (Cookies freeze well).
