  1. Coat 3 (9-inch) round cakepans with cooking spray; sprinkle 2 tsp. flour proportionately into pans, shaking to coat.
  2. Combine remaining 3 c. flour and next 4 ingredients in a large bowl. Stir together Large eggs, applesauce, and oil; add in to flour mix, stirring just till dry ingredients are moistened. (Don't beat.) Stir in mashed banana, vanilla extract, and pineapple. Pour batter proportionately into prepared pans.
  3. Bake at 350 degrees for 23 to 25 min or possibly till a wooden pick inserted in center comes out clean. Cold layers in pans on wire racks 10 min. Remove layers from pans; cold completely on wire racks.
  4. For Cream Cheese Frosting: Beat cream cheese and butter at high speed with an electric mixer till creamy. Gradually add in powdered sugar, beating at low speed just till smooth. Stir in vanilla and pecans. (Makes 3 1/2 c.)
  5. Spread Cream Cheese Frosting between layers and on top and sides of cake.
  6. This recipe yields 20 servings.
  7. Comments: We lowered the fat and calories by substituting applesauce for some of the oil, using less butter and sugar, fewer Large eggs, and substituting light for regular cream cheese.
