Receta Lime Caesar Salad With Grilled Chili Rubbed Shrimp

Ingredientes
- 12 lrg shrimp
- 1 c. cubed day-old crustless Italian bread
- 1/4 c. chili pwdr
- 1 lrg head romaine lettuce, torn into bite sized pcs Lime Dressing
- 1/2 c. mayonnaise
- 4 x oil-packed anchovy, liquid removed
- 1/2 c. grated parmesan cheese
- 2 x lightly smashed clv garlic
- 2 x minced garlic, cloves
- 1 Tbsp. lime, juice
- 1 Tbsp. lime, zest
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 3 Tbsp. extra virgin olive oil salt pepper
Direcciones
- In a large skillet add in extra virgin olive oil and heat till warmed. Add in the smashed garlic cloves and cook till browned. Remove garlic and add in the bread cubes. Raise the heat and cook the croutons till browned. Transfer to paper towels and drain.
- Divide the shrimp on skewers and lightly salt. Press the chili pwdr on all sides of the shrimp. Grill the shrimp for 5-6 min or possibly till the coating is lightly browned.
- In a large bowl toss the lettuce with the dressing. Add in the croutons, the remaining cheese and toss again. Slide shrimp from skewers onto salad.
- Lime Dressing:Whisk the mayonnaise, anchovies, 2 tbsp. Parmesan cheese, minced garlic, Worcestershire, lime juice, lime zest, mustard and a generous healthy pinch of pepper till well blended. Chill.
