- 2 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 2/3 cup butter, melted
- Filing:
- 3 packages (8 oz) each cream cheese, softened
- 1 1/4 cups sugar
- 3 eggs, lightly beaten
- 3 T lemon juice
- 1 T grated lemon peel
- 1 t vanilla extract
- Glaze:
- 1 cup Lingonberry Preserves
- 1 t lemon juice

%20I%20was%20making%20a%20mental%20inventory%20list%20of%20all%20the%20things%20I%20wanted....all%20the%20things%20I%20was%20going%20to%20buy,%20next%20time.%20I%20would%20love%20to%20go%20back%20to%20Ikea%20around%20the%20holidays%20*hint%20hint*%20and%20shop%20'til%20I%20drop:)%3C/p%3E%3Cp%3EOn%20the%203rd%20floor%20there%20was%20a%20cafeteria-style%20restaurant%20and%20that%20is%20where%20we%20ate.%20Bobby%20had%20Swedish%20Meatballs%20and%20Kim%20and%20I%20had%20the%20Chicken%20Tenders.%20We%20all%20shared%20a%20piece%20of%20Apple%20Cake%20and%20a%20piece%20of%20Chocolate%20Cake.%20The%20food%20was%20excellent%20and%20the%20Chocolate%20Cake%20was%20to%20die%20for!!%20Bob%20and%20Kim%20were%20there%20to%20buy%20a%20cabinet%20and%20some%20other%20things,%20so%20they%20had%20a%20cart%20full,%20but%20me,%20I%20just%20bought%20a%20jar%20of%20Lingonberry%20Preserves~%20I%20am%20a%20huge%20fan%20of%20jams,%20jelly,%20preserves,%20and%20fruit%20spreads.%20I%20always%20buy%20a%20%22jar%20of%20jam%22%20where%20ever%20I%20go...%3C/p%3E%3Cp%3E....On%20our%20way%20home%20we%20stopped%20at%20Trader%20Joe's%20in%20Milwaukee.%20I%20didn't%20even%20know%20there%20was%20a%20Trader%20Joe's%20in%20Milwaukee,%20so%20stopping%20there%20was%20like%20putting%20icing%20on%20the%20cake:)%20The%20%20first%20time%20I%20went%20to%20Trader%20Joe's,%20I%20was%20visiting%20my%20Grandkids%20in%20Athens%20GA.%20I%20immediately%20fell%20in%20love%20with%20Trader%20Joe's!%20I%20flew%20home%20from%20GA%20with%20a%20suitcase%20full%20of%20my%20Trader%20Joe's%20favorites!%20%20Every%20time%20I%20go%20to%20Trader%20Joe's,%20I%20always%20pick%20up%20my%20%22favorites%22and%20they%20are:%20Trader%20Joe's%20Brand%20Flakes,%20Kona%20Coffee%20Shortbread%20Cookies,%20Coffee%20and%20Pumpernickel%20Pretzels,%20that%20are%20wonderful%20with%20Reuben%20Dip.%20I%20also%20like%20to%20pick%20up%20a%20couple%20of%20%22New%22%20items%20to%20try.%20This%20time%20I%20picked%20up,%20Trader%20Joe's%20Carolina%20Gold%20BBQ%20sauce.%20According%20to%20the%20label,%20%20it's%20a%20golden-hued,%20mustard%20based%20sauce%20that's%20sweet%20and%20smoky%20with%20a%20hint%20of%20molasses%20and%20just%20the%20right%20blend%20of%20spices...I%20can't%20wait%20to%20try%20this%20sauce!%20I%20think%20I'm%20going%20to%20try%20it%20with%20Pork%20first...so%20keep%20your%20eyes%20open%20for%20an%20upcoming%20recipe%20featuring%20this%20bbq%20sauce:)%20They%20also%20had%20fresh%20figs%20on%20sale,%20something%20you%20don't%20ever%20see%20in%20the%20Northwoods%20of%20WI,%20and%20I%20was%20going%20to%20buy%20some%20but%20I%20didn't:(%20%20Darn%20it!%20%20%20%20%20%20%20Ikea%20Trader%20Joe's%3C/p%3E%3Cp%3EI%20had%20a%20great%20time%20going%20to%20%22the%20city%22%20with%20my%20son%20and%20his%20beautiful%20wife:)%20They%20are%20both%20Teachers%20and%20are%20now%20back%20in%20school,%20but%20I%20can't%20wait%20until%20the%20next%20school%20break,%20so%20we%20can%20head%20back%20to%20Ikea......there%20are%20a%20few%20things%20I%20need%20to%20pick%20up:)%3C/p%3E%3Cp%3EI%20thought%20the%20only%20thing%20that%20could%20do%20this%20jar%20of%20wonderful%20Lingonberry%20preserves%20justice%20was%20a%20Cheesecake~%20This%20cheesecake%20has%20a%20light,%20lemony%20flavor%20that%20pairs%20well%20the%20the%20tart/sweet%20flavor%20of%20the%20Lingonberry%20preserves~%20Enjoy!%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3EFor%20Crust:%20Combine%20cracker%20crumbs,%20sugar%20and%20butter.%20Press%20onto%20the%20bottom%20and%202%20inches%20up%20the%20sides%20of%20a%20greased%209-inch%20springform%20pan.%20Place%20on%20a%20baking%20sheet.%20Bake%20at%20350%20%C2%BA%20for%2010%20minutes%20or%20until%20set.%20Place%20pan%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EFor%20Filling:%20In%20a%20large%20bowl,%20beat%20cream%20cheese%20and%20sugar%20until%20smooth.%20Add%20eggs;%20beat%20on%20low%20speed%20until%20combined.%20Stir%20in%20the%20lemon%20juice,%20lemon%20peel%20and%20vanilla%20extract%20just%20until%20blended.%20Pour%20into%20crust.%20Return%20pan%20to%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20for%2045-55%20minutes%20or%20until%20center%20is%20almost%20set.%20Cool%20on%20a%20wire%20rack%20for%2010%20minutes.%20Meanwhile,%20place%20preserves%20in%20a%20small%20saucepan,%20add%20lemon%20juice.%20Stir%20and%20cook%20on%20low%20heat,%20until%20preserves%20are%20melted.%20Remove%20from%20heat%20and%20set%20aside%20to%20cool.%20After%2010%20minutes,%20carefully%20run%20a%20knife%20around%20the%20edge%20of%20pan%20to%20loosen.%20Cool%2030%20minutes.%20Carefully%20spoon%20melted%20preserves%20over%20cheesecake.%20Cool%2030%20minutes%20longer.%20%20Refrigerate%20overnight.%3C/p%3E){kind=link}
