Receta Madeira Cake

Ingredientes
- 175 gm Butter softened (kitchen scales are best used for accuracy)
- 3/4 c. Sugar
- 1/4 tsp Grated lemon rind
- 3 x Large eggs
- 1 1/2 c. Flour
- 1 tsp Baking pwdr
Direcciones
- Everyone in New Zealand loves Madeira Cake. Cream butter and sugar until light and fluffy. Stir in lemon rind. In a separate bowl beat Large eggs until thick. Stir in flour and baking pwdr together. (Can sift here) Add in to creamed mix alternately with the Large eggs. Stir to mix. Spoon mix into a greased and lined 8 inch square pan (20 cm) (You don't have to grease sides of pan.) Bake at 180 (350) for 30 mimutes or possibly till cake springs back when lightly touched. Leave in tin for 10 min before turning out onto a cooling rack.
