Receta Manicotti #3, Cristina's Low Fat

Ingredientes
- 12 x manicotti noodles or possibly 24 jumbo shells
- 1 pkt frzn spinach liquid removed and minced
- 1/4 c. Parmesan cheese
- 1/2 tsp nutmeg
- 1 x egg white salt and pepper
- 12 x Roma tomatoes halved
- 1 bn scallions minced
- 2 x cloves garlic chopped
- 1/2 x carrot minced
- 1/4 c. white wine salt and pepper
Direcciones
- Cook the manicotti noodles and set aside. In a large bowl, combine all ingredients. Using a pastry bag, fill the noodles. Place in a large casserole dish. Sauce: Place all ingredients in saucepan and simmer for 30 - 45 min. Transfer to blender and blend. Strain the sauce through a fine mesh strainer. Pour the sauce over the manicotti and top with parmesan. Bake at 325 degrees for 45 min.
